Gluten-free Flour Blends

Here are some blends that I’ve experimented on. They’ve worked well for me so far.

Gluten-free Self-Rising Flour Blend (2 cups):
Whisk together 1 cup rice flour, 1/2 cup potato starch, 1/4 cup tapioca starch, 1/4 cup almond meal, 1 tablespoon baking powder and 1 teaspoon salt.

Gluten-free Self-Rising Flour Blend for Rolls (2 cups):
Whisk together a cup and a half of rice flour, 1/2 cup corn starch , 2 tablespoons baking powder, 1 tablespoon coconut sugar, and 1/8 teaspoon salt.

Gluten-free All-Purpose Flour Blend (2 cups):
Sift 1 cup rice flour, 1/2 cup corn starch, 1/4 cup potato starch, and 1/4 cup tapioca starch into a container.

Gluten-free Cake Flour Blend (2 cups):
Combine 1 cup rice flour, 3/4 cup potato starch, and 1/4 cup tapioca starch.
