Walnut Kalabasa Pudding

Combine the following dry ingredients in a bowl:

  • 1 cup of rice flour
  • 4 tablespoons of almond flour 
  • 1/4 cup of potato starch
  • 1/4 cup of cassava starch l
  • 2 teaspoons of Calumet™ baking powder
  • 1/8 teaspoon of salt
  • 1/4 cup of crushed walnuts

    Create a well in the middle of the mix and add the following wet ingredients:

  • 2 tablespoons of sunflower or safflower oil
  • 4 tablespoons of raw honey
  • a cup of mashed steamed squash
  • 1/4 cup of almond milk
  • 2 heaping tablespoons of Made by Max™ Cashew Butter Vanilla Chai

    Mix everything well then fold in 2 egg whites beaten to a stiff peak. As usual, mix the first half in the batter till smooth then delicately fold in the remaining half.

    Pour in lined and greased muffin tins. Bake in a preheated oven at 180ºC for 35 minutes, or till it passes the toothpick test.
