Orange Mini Mamons with Black Sesame Seeds

This is a favorite recipe. So easy to prepare. Best paired with tea. I like it with lemon tea, but earl grey works well, too, because of the bergamot in it. It’s tempting to chow these down, one after another, because they are light and airy. However, the serving size is 3 mini mamons per person. This recipe yields 10 mini mamons. You will have 1 mamon extra for sharing.

Orange Mini Mamons with Black Sesame Seeds, and 2 without black sesame seeds

Sift together:

  • 1 cup of rice flour
  • 1/8 cup of corn starch
  • 1/8 cup of potato starch
  • 1/4 cup of cassava starch
  • a teaspoon and a half of baking powder
  • 1/8 teaspoon salt
  •

    Create a well in the middle and put in:

  • 2 tablespoons of sunflower or safflower oil
  • 5 tablespoons of raw honey
  • the zest of a whole orange
  • the juice of a whole orange

    Blend the batter till smooth, then fold in 2 egg whites beaten to a stiff peak with a teaspoon of cream of tartar.

    Pour in a greased and lined baking tin and lightly drizzle the top of each orange mamon with black sesame seeds.

    Bake in a preheated oven for 25 minutes at 180ºC. Cool them on a rack when they pass the toothpick test.
