Found a recipe for Easy Baked Salmon Recipe from Maryland. Decided to give it a try. Made adjustments so it would be enough for 2 fillets. It was pretty good.

Stir an eighth of a teaspoon of cinnamon, half a teaspoon of black pepper, a heaping spoonful of ginger, 2 tablespoons of soy sauce or soy sauce alternative into a bowl with the juice of half a lemon. Add a dash of salt and stir some more.

Place your salmon fillets in a lined and greased baking pan. I used an old pie ramekin from TESCO. It’s cheap and distributes the heat well.

Pour the marinade on the salmon and massage it into the flesh a little.

Bake in a preheated oven for 25 minutes at 180ºC (or follow the usual technique I use for wok-baking).

We had ours over RiCo™ Corn Rice.
