Basic Pineapple Pound Cake

 Sift together:

  • 1 cup of rice flour
  • ¾ cup of potato starch
  • ¼ cup of cassava starch
  • ½ cup of coconut sugar
  • ½ teaspoon of salt
  • 2 teaspoons of baking powder
    Create an indentation at the center of the flour mix and add:

  • 2 tablespoons of softened butter
  • 2 tablespoons of coconut oil
  • ¾ cup of pineapple juice
  • 3 tablespoons of raw honey
    Blend well and gently fold in 3 egg whites beaten to a stiff peak with a teaspoon and a half of cream of tartar.

    Basic Pineapple Pound  Cake

    Gluten-free, dairy-free pineapple pound cake topped with gluten-free, dairy-free, sugar-free Gelatissimo gelato and rice crispies.

    Pour the batter in a greased and lined loaf tin. Bake in a preheated oven for 35 minutes at 180ºC.

    Cool the loaf for 5 to 10 minutes then brush lightly with butter and a very small amount of coconut sugar. Slice and serve.
