Kweichow Chicken with Tomatoes, Pineapple and Thyme

Season about 4 pieces of chicken with a bit of salt and freshly ground pepper then sear on both sides.

Add garlic cloves with skin on. Continue to brown chicken. Add 2 bell peppers (sliced) and 6 tomatoes (cut into chunks). Leave to caramelize.

Put in 4 onions (chopped) and cook till translucent. Place a handful of fresh thyme, scoop in 2 to 3 tablespoons of Kweichow Garlic Chili paste, and a cup of fresh pineapple bits. Blend well. Cover pot and leave food to simmer till the chicken is so tender, it comes off the bones.

Serve with RiCo™ Corn Rice.
