Basic Breakfast Waffles

Combine thoroughly:

  • 1 cup of rice flour
  • 1/2 cup of potato starch
  • 1/4 cup of tapioca starch
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons coconut sugar
    Make a hole in the middle of the flour mix and add:

  • 2 tablespoons of safflower or sunflower oil
  • 2 tablespoons of raw wild honey
  • 1/2 cup almond milk
  • Blend well and fold in 2 egg whites with 1 teaspoon cream of tartar beaten to a soft peak.


    Pour your nice fluffy batter in your waffle maker and cook according to the instructions in your waffle maker’s manual. Serve with your preferred fruit and top with your fave dairy-free ice cream. I placed bananas and chocolate topping on mine.

    For the chocolate topping, follow the recipe for dairy-free condensed milk. Add a tablespoon of pure alkali cocoa to 2 tablespoons of dairy-free condensed milk. Blend well.

    You can turn this into Sunflower Bites by adding 4 tablespoons of crushed honey-roasted sunflower seeds, skipping the topping with the dairy-free condensed milk, fruit and cocoa, and baking for 35 minutes at 180ºC in a lined and greased square baking tin.

    It’s great for tea. The hubby couldn’t wait to dig in.
