Honey Walnut Banana Muffin

Sift together:

  • 3/4 cup of rice flour
  • 1/4 cup of oat flour
  • 1/4 cup of potato starch
  • 4 tablespoons of tapioca starch
  • 3 teaspoons of baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons of low-glycemic coconut sugar like Benevita
  • Create a well in the middle of the mix and add:

  • 2 tablespoons of sunflower oil
  • 2.5 tablespoons of raw wild honey
  • 1 mashed banana
  • 1/4 cup of water
  • 2 tablespoons of almond nut butter
  • Blend well and fold in an egg white beaten to a soft peak.

    Add 1 cup of crushed walnuts. Pour in lined ramekins and top with crushed walnuts and a light layer of raw honey.

    Bake in a preheated oven for 35 minutes for 180ºC.
