Nutty Sesame Noodles

Sauté 3 cloves of minced garlic and 1 head of chopped red onion in 1 tablespoon of sunflower oil.

Add 1/4 cup of chopped button mushrooms and a tablespoon of sesame seeds. Toast lightly.

Mix in 1 tablespoon of nut butter (I used the almond variety), 3 tablespoons of soy sauce replacement (or Kikoman, if you are allowed), 1/4 cup of broth (if you don’t have broth, just add 1/4 cup of water and a pinch of salt), and 2 tablespoons of onion powder.

Add some spring onions then pour over cooked gluten-free rice noodles. Drizzle some toasted sesame oil.

Top with shredded lettuce and carrots, and chopped radishes. Serve with roasted fish or chicken.
