Apple Pie

To make the pie dough, sift together:

  • 1 cup of rice flour
  • 1/2 cup of oat flour
  • 4 tablespoons of tapioca
  • 5 tablespoons of potato starch
  • 1/8 teaspoon of salt
  • 1 tablespoon of coconut sugar
  • 3 teaspoons of baking powder

  • Create a hole in the middle of the flour mix where you add:

  • 2 tablespoons of sunflower oil
  • 1/2 cup of coconut cream
  • 1 tablespoon of vinegar
  • 2 tablespoons of honey

  • Cut the liquid into the flour with a pastry cutter or a fork till the dough resembles bread crumbs.


    Have a cold cup of water ready and add it to the dough one tablespoon at a time. You might probably end up only using 3 tablespoons of it to achieve the texture that you want to knead everything into a smooth dough.


    Dust your work surface with flour then gently knead the dough. Do not overwork it.


    Divide the dough into 4 equal balls. Using a rolling pin, flatten each ball into a circular pastry shape. Add the filling (which is a mix of 2 cups of mashed apples coated in 3 tablespoons of raw honey, 3 tablespoons of crushed walnuts, 1/4 teaspoon of cinnamon, and 1/4 cup of cranberries), and seal each pie. I use a fork to finish off the edges.


    Place in a lined baking tin, brush thoroughly with honey wash (which is a blend of 1 tablespoon of honey and 1 tablespoon of water), and bake in a preheated oven for 30 to 35 minutes at 150ºC.


    Serve with a dollop of dairy-free condensed milk.
