Choconut Doughnuts

Whisk together:

  • 1 cup rice flour
  • 1/2 cup oat flour (powdered gluten-free rolled oats)
  • 5 tablespoons cornstarch
  • 4 tablespoons tapioca flour
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • 3 tablespoons coconut sugar
  • 1 tablespoon decaf coffee
  • 5 tablespoons cocoa powder

  • Create a well in the middle of the mix and add:

  • 1/2 cup almond milk
  • 2 tablespoons neutral oil (like sunflower or safflower oil)
  • 2 tablespoons raw honey
  • 2 teaspoons vanilla extract

  • Blend everything till smooth. It will be crumbly at first, but it will eventually mash together. Add an egg white beaten to a soft peak and fold it into the dough. Knead till smooth.


    Divide into 6 medium-sized balls. Top with cashews. Create a hole in the middle of each ball, till it looks like a doughnut, and dust lightly with almond meal or top with dairy-free condensed milk.


    Place in a lined baking tin and bake in a preheated oven for 30 minutes at 150ºC.
