Citrusy Amazeballs with Sesame Seeds

Sift together:

  • 1 cup rice flour
  • 1/2 cup oat flour (which is basically gluten-free rolled oats that you’ve powdered using a burring machine or a food processor)
  • 4 tablespoons cornstarch
  • 4 tablespoons potato starch
  • 4 tablespoons tapioca
  • 1/8 teaspoon salt
  • 2 tablespoons coconut sugar
  • 3 teaspoons baking powder

  • Create a well in the middle then add:

  • the juice of 1 orange and half a lemon
  • the zest of 1 orange and half a lemon
  • 2 tablespoons of raw honey
  • 2 tablespoons of sunflower or safflower oil

  • Mix till everything is well incorporated. Have patience.

    Add an egg white beaten to a soft peak. Knead the dough till smooth.

    Divide into 9 balls and roll over sesame seeds. For this, I used a combination of black and regular sesame seeds.

    Place in a lined baking tin, and brush with an egg wash (1 yolk and 1 tablespoon of water) or honey wash (1 tablespoon honey and 1 tablespoon water).

    Bake in a preheated oven for 35 minutes at 160ºC.

    Serve with your favorite fruit or a thin layer of dairy-free condensed milk or nut butter.
