Spinach & Sardines Pizza

Whisk together:

  • 1 cup rice flour
  • 1/4 cup oat flour
  • 1/4 cup very finely ground (ground to a powder—use a burring machine) RiCo™ Corn Rice
  • 1 tablespoon baking powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/8 teaspoon salt

    Create a well in the middle and add:

  • 2 tablespoons sunflower or safflower oil
  • 1 tablespoon Bragg’s gluten-free apple cider vinegar
  • 1/2 cup water

  • Fold in an egg white beaten to a stiff peak with a teaspoon of cream of tartar.

    Knead and form into a ball, place in a lined circular baking tin, and spread till the entire bottom of the tin is covered.

    Add topping. For this, I used:

  • a packet of gluten-free sardines
  • some chopped onions and minced garlic
  • baby spinach
  • roasted bell pepper
  • salt, pepper, dried basil and oregano, and smoked paprika to taste
