Gluten-free Pumpkin Oatmeal Balls

500 grams of mashed steamed pumpkin mixed with a dash of salt and pepper, 1 tablespoon of garlic powder, 1 teaspoon smoked paprika, chili powder (as spicy as you want it or you can just skip this altogether), finely chopped spring onions, and finely chopped roasted bell peppers

1 egg white in a bowl

1 cup of ground rolled oats

Form the pumpkin mash into balls, roll on the ground rolled oats, dip lightly in the bowl of egg white, and roll again in the ground oats. Repeat till you’ve used up all your pumpkin.

Fry in sunflower oil till golden brown. Rest on a paper towel, and serve with your favorite dressing. I used our homemade mustard vegannaise.
