Chocolate Chip Oatmeal Cookies

Combine 1/2 cup of Nuttlex sunflower butter (or 1/4 cup of sunflower or safflower oil), 1/4 cup of muscovado sugar, 2 egg whites, 2 tablespoons of coconut milk, 2 tablespoons of almond milk, 1 cup of ground rolled oats, 1 cup of rolled oats, 1/2 cup of rice flour (sifted with 5 tablespoons of potato starch, 4 tablespoons of tapioca starch, a teaspoon of salt and a teaspoon of baking powder), and a handful of dairy-free chocolate chips and walnuts (or any nut of your choice). Blend till everything is properly incorporated in the mixture. Scoop on a greased baking sheet and bake in a preheated oven at 170°C for 10 t 15 minutes (or until it is light brown). Take out of the oven. Leave them to cool before removing them from the tray. Serve with a glass of almond milk or your favorite cup of decaffeinated coffee.
