20-minute Herbed Eggplant

  1. Chop a large eggplant, a head of onion, and a piece of tomato into small pieces.
  2. Drizzle with 2 tablespoons of olive oil, a pinch of sea salt, a dash of fresh ground paper and some dried basil and thyme.
  3. Place them in the pan, along with 3 cloves of garlic. Bake in a preheated oven for 15 to 20 minutes at 170°C.
  4. Take the garlic out of their cloves. Mash them, and mix them with the rest of the dish.
  5. Spray some balsamic vinegar, if you wish. Serve while hot.
