Dory and Mustard Sandwich with Thai Basil

It sounds weird, I know, but it’s actually quite tasty. If you can’t stand soft-boiled eggs, replace them with hard-boiled eggs (or scrambled eggs, if you like). I used Thai basil for this, although your regular basil will do.

  1. Combine 1 head of onion (minced), 1 red bell pepper (chopped into small squares), 2 soft-boiled eggs, 2 tablespoons of dijon mustard, 1 dory fish fillet (boiled and crumbled), half a teaspoon of sea salt, and a pinch of ground black pepper in a bowl.
  2. Spread on your choice of gluten-free bread and top with basil leaves and tomatoes.

We decided to try out the Dowell grill my husband won in a raffle and we love it. It’s portable. We can cook on the table. It’s also easy to clean and put away. Definitely something we’ll be using more of.
It’s a simple way to cook corn. I love the burnt parts that has a faint salty taste, and crusty texture on the surface, then it melts once you get your teeth into the middle of the kernel.

  1. Sounds delicious! I make a good crazy chicken rice noodle dish with Thai basil.
    I’m looking for more recipes that use that herb.
