Pineapple and Cheese Muffins

  1. In a separate bowl, sift together all the *dry ingredients (*a cup and a half of flour, a teaspoon of baking powder, and a pinch of salt) and set aside.
  2. Get 4 eggs and separate the whites from the yolks.
  3. Beat the egg whites till stiff and gradually whisk in a cup of sugar (preferrably, refined).
  4. Mix in the yolks and half a cup of sweetened pineapple juice.
  5. Fold in the dry ingredients and whisk till smooth.
  6. Put the batter in waxed muffin cups, top with grated cheese and bake at at 150°C for 35 minutes.
  7. Take out and top with butter.
  8. Serve with tea or coffee.
