Stuffed Curry Peppers

Take a piece of red bell pepper and cut in the middle. Put in the *curry stuffing. Wrap it in aluminum foil and bake in the oven for 5 minutes at 150°C. Serve with chicken or fish.

Curry Pepper Stuffing:

  1. Heat 1/4 cup of gluten-free chicken broth.
  2. Add 2 tablespoons of Nuttlex sunflower butter, a pinch of pepper, 1/4 cup of coconut cream or almond milk, and a teaspoon of curry powder.
  3. Put in the potatoes and the carrots (chopped in squares) and leave to cook.
