Chocolate-Filled Vanilla and Almond Cake

  1. Get 4 eggs and separate the whites from the yolks.
  2. Beat the egg whites till stiff then set aside.
  3. Beat the yolks and gradually add in 3/4 cup of sugar, 1/4 teaspoon of vanilla (or a cup of cream/milk), and a handful of crushed almonds.
  4. Fold in a cup of flour and the stiffly beaten egg whites. Mix till smooth.
  5. Line a small baking pan with wax paper and pour in the batter.
  6. Bake at 150°C for 20 to 35 minutes.
  7. Cool cake and cut in half. Spread a layer of *frosting on one half and cover the top with the other half (like a sandwich).
  8. Serve a piece with your favorite coffee or tea.

*To make your own frosting, heat 2 tablespoons of butter into a pan at low heat and add in about a handful of chocolate chips. Mix till smooth and use on the cake.
