Beef Aubergine

1. Boil beef till tender. Separate the meat from the broth and set aside.
2. Saute chopped onions, minced garlic and red bell pepper slices in vegetable oil.
3. Add in the beef, fry lightly then add tomato slices.

4. Once it’s nice and gooey, pour in the broth and add the eggplant slices.

5. Mix in the green peas and leave to cook.
